Note: The OneNote importer tool is very slow. Once upon a time they made a great note taking app but they've been in a slow decline for over a decade. I would prefer to give my money to an independent software developer rather than Microsoft, but I need a functional note taking app. I've migrated all my notes to OneNote, deleted the notes from Evernote, removed Evernote from all my devices, and cancelled my Evernote Premium subscription. Given Evernote's customer hostility, I expect that the "legacy" Evernote version will be removed or altered to make it more difficult to get your notes out. It is working well, but Microsoft has stopped development on it. I've exported my ~7,000 notes and am currently using Microsoft's Evernote to OneNote Importer. You can, however, still select all your notes and export them. I put legacy in scare quotes, because the ability to work offline seems to have been removed. Thankfully, you can still (as of yesterday morning) still download a "legacy" version of Evernote. That would make exporting my ~7,000 notes nearly impossible. If you want to export your notes you find that you're not allowed to select 50 notes at a time. There is no longer an offline copy of your data lose your network and you can't work. Also, they clearly want to make it as hard as possible to get your notes out. So much basic functionality has been removed that it is nearly unusable. I've been paying for Premium for years on the theory that they'd add features that I wanted (never happened). This weekend, hoping in spite of experience, I "upgraded" to version 10 of Evernote to see if either were included. I've been asking for and waiting for collapsible bullet lists and search & replace for over a decade.
